There are three layers in the tri-ply product.
Cooking surface stainless = 18/10, so cooking surface will not react with acidic foods.
Inner layer of metal = aluminum, this layer is sandwiched between the 2 layers of SS, you can't see it
Outer layer of stainless = 18/0, for induction capability.

I would talk to the store you purchased these at and see if they can get you the manual.

As far as stainless steel goes, there is no need to season the pans before first use. I wipe down all new pots and pans with vegetable or canola oil before I use them, but that is just personal preference.

One tip for cooking with stainless steel is: hot pan and cold oil. Before you add your meat or vegetables, make sure the pan is hot and then add your cooking oil followed by the meat or vegetables. Makes for less sticking.

Are the handles uncomfortable?
I picked up the skillet in the store and it really hurt my hand. The handles on the set that is not tri-ply are super comfortable. But I wanted to go with tri-ply. I just wondered if someone that uses them could comment on that.
